Mom’s Skillet Fried Chicken
This is your weekly go-to classic skillet-fried chicken recipe, made with healthy fats. You’ll love this recipe! Make it every week for your family, even if you are solo. Ready in approximately 30-45 minutes.
Ingredients
5-6 Chicken Thighs
Soy Sauce
Herbs & Spices
Cornstarch
Olive Oil
Butter

Directions
Combine 3 tbsp olive oil and 2 tbsp butter in large skillet on medium heat. This process is important to start browning the skin right away. Add chicken thighs in one layer, SKIN DOWN on the oil.
Score each thigh bone with a knife, and drizzle Kikkoman soy sauce over the thighs.
Next, generously season the chicken thighs evenly with herbs and spices, including: sea salt, black pepper, white pepper, herbs de Provence, Italian herbs, garlic powder, onion powder, paprika, and parsley.
Now gently pour 1 tbsp of corn starch on each thigh, and use a fork to lightly pat the cornstarch into each chicken thigh. This will form a delicious crust and lock in the juices. Crucial.
Cover and cook 15 minutes on medium heat, skin side down.
Next, use the fork to carefully loosen the browned skins going around the pan. Get them ready to flip, but do not break them from the chicken. Now turn each chicken thigh over, one after the other — so they all cook in time together.
Now you can season the top of each the browned chicken thigh with the same herbs and spices and corn starch method to lock in the juices. Note: You do not need to add more soy sauce here, because the first time was enough, although you can add sliced onions and smashed garlic cloves to the pan at this point, if desired.
Cover and cook 15 minutes on medium heat, carefully turning the thighs over twice, until finished.
When browned to perfection, turn off the heat, and let the thighs cool down for 10 minutes.
Now you can plate, serve, and enjoy them with your favorite vegetables.

Origins of Pumpkin Spice Day
The spices behind “pumpkin spice” — cinnamon, nutmeg, ginger, cloves, allspice — have been used in cooking and baking for thousands of years. In fact, evidence of nutmeg use dates back over 3,500 years in the spice trade.
In early American cookery, pumpkin dishes often included a spice blend very similar to what we now call “pumpkin spice.” One of the first known American cookbooks (from 1796) included pumpkin-pie recipes using spices like ginger and nutmeg.
By the 1930s, spice companies — notably McCormick — began selling pre-blended “pumpkin pie spice,” cementing the flavor profile into a mixed spice blend, making it easy for home cooks to bake pies without mixing dozens of jars.
